Cacao and coconut waffles (gluten free, vegan, low fodmap)

These lovely little waffles are packed with plant based protein and full of flavour. They make a beautiful breakfast or a delicious dessert. I’ve purposely kept the sugar content very low, so these aren’t overly sweet, therefore you can add sweetness to suit your own tastes when they’re cooked with a drizzle of maple syrup.

CACAO AND COCONUT WAFFLES

Ingredients 

1 1/2 cups gluten-free rolled oats

1/2 cup protein powder I use thatprotein blissful brown rice and cacao protein 

2 tablespoons ground flaxseed

1 teaspoon baking powder

1/2 teaspoon bicarbonate of soda

1/2 cup plant based milk

1/2 cup coconut yoghurt or coconut milk

1 teaspoon coconut sugar

1 tablespoon melted coconut oil

1 teaspoon apple cider vinegar


Method

Preheat your waffle iron. I usually use it on the highest setting.

In a high speed blender or food processor, blitz the oats until they turn to oat flour.

Add the rest of the ingredients and blend until smooth.

Spoon the batter into your preheated waffle iron and cook according to the manufacturers instructions.

Serve straight away with coconut yoghurt, fresh fruit and a drizzle of maple syrup.
