Tahini dressing 3 ways
These dressings can take your meals and summery salads to the next level. Tahini can be quite thick and seemingly not the easiest ingredient to turn into a light but creamy dressing. These recipes require no extra oil, just 4 - 7 ingredients and a wee bit of magic. We all know the saying "Oil and water don't mix" however the addition of boiling water and a bit of whisking is all that you need to make this come together in seconds. Use these as salad dressing, dips for vegetable crudités or tortilla chips, add to wraps or tacos, drizzle over Buddha bowls or serve with anything you fancy.
LEMON TAHINI DRESSING
Ingredients
2 tbsp tahini
4 tbsp boiled water
2 tbsp lemon juice
Generous pinch of salt
Optional: pinch of chilli flakes and/ or herbs of your choosing - parsley and oregano work beautifully.
TURMERIC TAHINI DRESSING
Ingredients
2 tbsp tahini
4 tbsp boiled water
2 tbsp tbsp lemon juice
Generous pinch of salt and cracked black pepper
1/2 teaspoon of turmeric
Optional: pinch of chilli flakes.
GINGER AND LIME
Ingredients
2 tbsp tahini
4 tbsp boiled water
1 tbsp tamari (gluten free soy sauce)
1/2 tsp minced fresh ginger
1 tsp coconut sugar or maple syrup
the juice of half a lime
pinch of chilli flakes
salt to taste
Method
In a bowl, whisk the tahini and hot water until it comes together. Next add the remaining ingredients and whisk thoroughly until everything is beautifully smooth. Taste and adjust seasoning.
Store in an airtight container in the fridge for up to 4 days. It may thicken in the fridge so just loosen with some more water to reach your desired consistency as/or when necessary.
