Gorgeous Green Juice

​Refreshing, nourishing and delicious. This green juice is one of my favourite juice recipes and one of the easiest ways to give my body a boost when my collection of chronic illnesses throw a wobbler. Feel free to add different combinations of fruits and vegetables depending on whatever works for you and your symptoms. For example courgettes (zucchini), celery, lemon, lime, bok choy, broccoli etc. 

GREEN JUICE (serves 2)

Ingredients

4 large handfuls of spinach 

2 large handfuls of kale  

1 cucumber 

2 handfuls of pineapple (feel free to use 2 apples if your not following a Low Fodmap eating plan) 

1 thumb sized chunk of fresh ginger

1 bunch of fresh mint  

Method

Run all of the ingredients through a juicer.  Scoop up the pulp and run it through the juicer once or twice more so you get the absolute most out the ingredients. Give the juice a good stir and serve.

If you have any left over, store in the fridge for up to 2 days and give it a stir before drinking as separation may naturally occur.

 

Note: if you want to avoid waste and get the most from your ingredients, run all the vegetables through the juicer first, twice, then set the pulp to one side before putting the fruit through the juicer. You can then add the veg pulp into soups, stocks or anything you like.
