Oven baked polenta fries

These are super simple to make, cheap, cheerful and absolutely delicious. You can play around to create your favourite flavours, try garlic and Italian herbs or perhaps give them a little kick with peri peri seasoning.
Basic ingredients:
2 cups of vegetable stock
2 cups of plant based milk (I used unsweetened almond)
1 1/2 cups of quick cook polenta
You can use whatever seasonings you like
I used:
1/2 tsp garlic powder
1/4 tsp onion powder
1 tsp of mixed herbs
2 tbsps nutritional yeast
Pinch of chilli flakes
Salt and pepper
Method:
Bring the vegetable stock and milk to the boil in a pan over a medium heat. Add the polenta and seasoning of your choice, reduce the heat a little and stir continuously for about 5 mins until it's cooked.
Taste and adjust the seasoning.
Pour into a lined brownie tin/oven dish and smooth out to create an even surface.
Pop into the fridge for a least an hour to firm up.
Slice into thick cut chips and place on to a baking tray lined with grease proof paper. Drizzle or spray with a little olive oil then bake in the oven at 200°c for about 20-30 mins or until lovely and golden, turning once half way through
