Jingle bell (energy) balls

 

Ingredients:

1 1/2 cups of oats

1/2 protein powder of your choice- I use thatprotein peanut protein powder

1/2 cup peanut butter

2 tbsps coconut oil

2-4 tbsp of liquid sweetener.g pure maple syrup

1 tsp vanilla extract

1 1/2 tsp ground ginger

1/2 tsp cinnamon

1/4 tsp of nutmeg

(Feel free to adjust the spice qualities to suit your personal taste)

Pinch of salt

Small handful of chocolate chips or cacao nibs (I used dairy free chocolate chips)

Handful of dried cranberries

 

 

 

Method:

Pop all of the ingredients (except for the chocolate chips and cranberries, and start off with just 2tbsp of the sweetener) into a food processor and mix well for a couple of minutes until everything is smooth and fully combined. Taste and adjust sweetness if required.

 

Stir through the chocolate chips or cacao nibs and cranberries and roll into balls. Pop into the fridge to firm up. Store in the fridge for about a week or the freezer for up to 3 months.
