Cookie dough energy balls

Cookie dough energy balls  
These are made to be allergy friendly and kind to your system. They are gluten free, refined sugar free, suitable for vegans and for people with dietary restrictions following a low fodmap eating plan. If you don't require this recipe to be Low fodmap, feel free to add whatever sweetener, protein powder or nut butter that you like.

Ingredients:
2 cups of oats (feel free to substitute some of the oats with a low fodmap protein powder of your choice)
1/2 cup peanut butter
2 tbsps coconut oil
2-4 tbsp of fodmap friendly sweetener of choice(e.g pure maple syrup, coconut sugar) 
1 tsp vanilla extract
Pinch of salt
Small handful of chocolate chips or cacao nibs 


Method:

Pop all of the ingredients (except for the chocolate chips, and start off with just 2 tbsp of the sweetener) into a food processor and mix well for a couple of minutes until everything is smooth and fully combined. Taste and adjust sweetness if required.
Stir through the chocolate chips or cacao nibs and roll into balls. Pop into the fridge to firm up. Store in the fridge for about a week or the freezer for up to 3 months.
